If you love cream cheese, you will enjoy these cookies! Cream cheese is not only in the cookie, but also on the top of it.
– 4 oz cream cheese, room temp
– 1/4 cup (4 TBSP) butter, room temp
– 3 TBSP sugar
– 1 egg
– 1/2 tsp vanilla extract
– 1/4 tsp lemon juice
– 1-1/4 cups flour
– 1 tsp baking powder
– 1/4 tsp salt
Cream cheese spread
– 3 oz cream cheese, softened
– 1 egg yolk
– 2 TBSP sugar
– 1/2 tsp lemon zest
– 1/2 tsp vanilla extract
In mixer with paddle attachment, beat all cream cheese spread ingredients until combined.
Put in the fridge until needed.
For the cookie dough:
Preheat oven to 350F
Sift flour, baking powder and salt
With paddle attachment, beat together cream cheese with butter until fluffy and smooth
Add sugar and beat until incorporated
Add eggs, lemon juice and vanilla
Gradually add flour mixture and only mix until combined. Do Not Overmix!
Don’t panic, batter will be sticky
Form discs from dough on parchment paper and place on baking sheet
Spread cream cheese on top focusing mostly on the center
Bake for 10 min (light in color, just starting to brown on the bottom)
Cool on baking sheet for a few min before transferring to a wire rack
For added flavor, drizzle with melted chocolate
