German Butter Cookies – With a little help of cognac, lots of butter and a sprinkle of confectioner sugar, these sugar cookies are divine! They are pretty simple to make but do take time to chill after making the batter. However, so worth the time!
– 2 cups flour
– 1 tsp baking powder
– 2 sticks butter (unsalted) – room temp.
– 2/3 cup granulated sugar
– 1 tsp vanilla extract
- Pinch salt
– 2 egg yolks, room temp.
– 1 Tbsp Grand Mariner liqueur
– Confectioner sugar
Prepare flour mixture:
In a mixing bowl sift flour and baking powder.
Prepare batter:
In mixer (with paddle attachment) mix butter (thinly slice butter if semi-cold).
Once creamy, slowly add granulated sugar and mix until creamy.
Add vanilla extract, a pinch of salt, 2 egg yolks and splash of Grand Mariner.
Then add flour mixture.
Mix the dough only until combined.
Then take it out of the mixer and knead it with your hands on a flat surface to form a disc. Cover the dish with foil and put it in the fridge for min. 2 hours.
Take dough out of the fridge and let it sit out at room temp until they are easy to form into little balls.
Place balls on baking sheet lined with parchment paper and place it in the fridge for 15-20 min.
Bake it at 350°C for 12 min (until almost baked).
After the cookies are baked, but still hot, sprinkle generously confectioner sugar until they get coated. Cool them off on the rack.
