Green Apple Cake – A great combination of cinnamon, apples and liqueur! Flavorful apple cake that is even better the next day! A simple cake layer covered with cubed apples adds fun flare. A sprinkle of grind nuts on the top of the cake adds crunch and completes the look!
– 1 cup flour
– 1 tsp baking powder
– Pinch of salt
– 8 Tbsp (1 stick) unsalted butter
– 75 ml milk
– 4 green Granny Smith apples
– 1 egg
– 1/2 cup sugar
– 1 tsp vanilla extract
– 1 Tbsp Grand Marnier liqueur
– 1-2 Tbsp ground cinnamon
– 1-2 Tbsp sugar
– 1 Tbsp nuts (including pistachio), roughly grind
Prepare Flour Mixture: In bowl sift flour, baking powder, and salt.
Prepare Milk Mixture: Melt butter, cool off. Once cooled off, mix in milk. Add vanilla extract and liqueur.
Prepare Apples: Apples: peel, core, and cut in cubes.
Make Batter:
In mixer (paddle attachment) mix egg and sugar until pale yellow and fluffy (about 3 min).
Add milk mixture.
Add flour mixture (at once) and mix until combined.
Butter a 9″ funnel cake and place parchment paper on the bottom.
Pour batter, sprinkle a layer of cinnamon on top, and then arrange a thick layer of apples on top. Sprinkle grinded nuts and 1-2 Tbsp sugar on top.
Bake at 350 for 45-50 min, until golden outside and dry towards the center when probed with a cake tester.
**Notes: Keep it covered outside, very yummy, great with apples but not with other fruit as the batter becomes mushy.
