Mini Cinnabons – just love these! Tasty little treats!!
Cinnamon filling:
– 3/4 to 1 cup packed brown sugar
– 2 TBSP cinnamon
– 4 to 5 TBSP butter, melted, cooled
– 1 tsp Kahula, optional
In a bowl combine butter, sugar and cinnamon. Mix in Kahula. Put aside.
Yeast mixture:
– 1 (2¼ tsp or ¼ ounce or 7 g) package active dry yeast
– 1 cup (250 mL) warm milk (at 100-110 F)
– 1 tsp sugar
Heat up milk to 100-110F (max!), transfer to a cup and add sugar; mix to dissolve.
Sprinkle yeast, mix and let it bloom in room temp. for 10-20 min.
Dough:
– 1/2 cup (100 g) granulated sugar
– 2 eggs, room temp.
– 6 tbsp butter, melted, cooled
– 1 tsp salt
– 4 cups (500 g) all purpose flour, sifted
– 1 tsp vanilla extract
In mixer w/ paddle attachment mix sugar with eggs until fluffy.
Add vanilla extract.
Then add butter, salt, and flour. Mix only until combined.
Pour the milk/yeast mixture and using the dough hook, mix until well incorporated for about 8 min, or until dough no longer sticks to the bowl (mixer: level 4).
Place dough into buttered bowl and spray dough with oil or butter so it doesn’t form hard skin.
Cover it with towel and let rise in a warm place about 1 hour or until the dough has doubled in size.
Roll the dough out on a lightly floured surface (do not punch it, but just fold it) into a rectangular shape and about 1/4” thick.
Spread the cinnamon (or apple) filling mixture evenly.
Working from the long edge, roll the dough to the bottom edge forming a roll.
Cut the roll in a small slices (about .75-1”) with a serrated knife
Grease metal (not glass) baking sheet
Place rolls in the sheet along the edges/walls (not in the middle), cover them with towel, and let them rise for another 30-60 min or until they double in size (not longer because they will grow too much)
Preheat oven to 350F
Bake for 20-22 minutes or until light golden brown (longer time, 30 min, for larger pieces).
Cheese cream frosting:
– 8 oz cream cheese
– 2 TBSP butter, soft, room temp
– 2/3 cup heavy cream
– 1 tsp vanilla extract
– 1 1/2 cup powdered sugar
With a hand mixer, mix cheese and butter until combined.
Add heavy cream and vanilla extract.
Add powdered sugar. Mix until fluffy
When rolls are almost completely cooled off, spread generously with frosting.
Apple filling:
Dice green apples and place them on skillet with butter, sugar, and cinnamon
Cook them down until almost mushy
Spread over the rolled dough
