Polish Butter Cookies baking reimagined

You will be in love! The flavor, the texture and a simple look, just absolutely yum! A bonus, so easy and fast to make! 

– 1 cups (150g) flour
– 5 TBSP (30 g) vanilla custard powder (budyn waniliowy, proszek)
– 4 TBSP sugar powder (must be sifted)
– 1/4 tsp baking powder
– 1/2 tsp vanilla extract
– pinch of salt
– 1 stick of butter (113 g), chopped in small pieces, cold
– 1 egg yolks
– 1/2 TBSP water, cold

In a bowl sift flour with vanilla custard powder, sugar powder and baking powder. Mix to combine

Add vanilla extract, pinch of salt, and sticks of butter. Start mixing it fast with a knife, so the butter doesn’t melt too much & mix until crumbs form

Add egg yolks and cold water and mix until combined into one smooth dough

Place the dough in plastic wrap and in fridge for 1-2 hrs.

Prepare the baking sheet with parchment paper

Remove the dough from fridge and form any shape we want (preferably no bigger size than ping pong balls per cookie)

Bake at 350F for 20 min, until they start gaining color on bottom

Remove from the oven, let them rest for a few minutes and then sprinkle or coat them in sugar powder

Store in the closed container, not in fridge
