Simple Variations Cookies – I simply love these cookies! They are fun to make and eat, with a variety of flavors and creative designs. Use your imagination when decorating them, from grinded nuts, jam, to shredded coconut. An absolute blast for adults too!

– 10 Tbsp butter, soft
– 6 Tbsp sugar powder
– 1 egg room temp
– 1 & 1/4 cup flour
– Pinch of salt
– 1/2 tsp vanilla extract
– 1/4 tsp almond extract
– Jam
– 1/4 cup grinded nuts
– 1/8 cup shredded coconut
– 1/8 cup hazelnuts, cut in half

In the mixer (with paddle attachment) mix butter and powder sugar until pale and light.

Add egg, mix.

Add sifted flour mixed with salt.

Add vanilla and almond extracts. Mix only until combined.

Place cookie batter in sleeve (use heavy bag as dough will be tough) with large opening.

Pipe* swirls/shapes on baking sheet lined with a parchment paper.

Decorations:

~ Place jam in the middle of cookie or create a design; sprinkle nuts on top

~ Place jam in the middle of cookie or create a design; sprinkle coconut on top

~ Cut hazelnuts in half and place them in the middle of the cookie 

Bake cookies at 350 for 15-18 min.

Store in closed container.

* Size: keep it small as they might expand when baking
