Traditional Polish Vegetable Salad – Saladka Jarzynowa – A traditional Polish vegetable salad usually served during the holidays. My grandma used to make it for special occasions and holidays. Made with cooked root vegetables, potato, carrot, parsnip, peas, and hard-cooked eggs combined with mayonnaise and mustard. Served as stand alone, with ham or a side dish. Super easy to make and stays fresh for days! 

– 3 potatoes (peeled)
– 3 carrots, peeled 
– 1 parsnip, peeled 
– 1 celery
– 5 eggs, hard-boiled
– 3 pickles
– 1 granny smith apple
– 1 can green sweet peas, drained
– 1 cup mayo
– 1 tsp Dijon mustard
– Salt, pepper
– Smoked paprika (optional)

Boil: potatoes, carrots, parsnip and celery until just soft. 

Drain and cool.

Chop into small cubes. 

Cube: eggs, pickles, and apple. 

In a bowl combine all cubed veggies, peas, mayo, mustard and salt & pepper. 

Cover and refrigerate for at least 1 hr.

Serve as stand alone, with ham or a side dish.
