Two Bites Apple Pie – Scrumptious apple bites that are crispy and flavorful! They are very easy and quick to make with a very few ingredients. Each of those little bite size of goodness is packed with delicious apple flavor! 

– 1 sheet frozen puff pastry (thawed out overnight in the fridge)
– 3-4 small apples
– 1 Tbsp brown sugar
– 2-3 Tbsp lemon juice (depending how sweet are the apples)
– 3-4 Tbsp water
– 1 egg
- 1 tsp mil
– 1/2 tsp cinnamon (optional)

Egg wash:
In a small bowl whisk with fork egg with milk.

Apple filling:
Chop apples to small pieces, cook in pot with brown sugar, lemon juice and water.
Cook until tender.
Add in cinnamon.

Prepare puff pastry:
On a lightly floured work surface roll out sheet of puff pastry.
Using 2” cookie cutter cut out circles.
Take one circle, place apples in the middle, brush edges with egg wash, place another circle on top.
Make sure the edges are stuck together.
Make little cuts on top (for air to get out), brush egg wash on top, and sprinkle sugar on top.
Bake at 400 for 12-15 min.
Cool off and serve.
