Zupa Fasolowa - Bean Soup

Love this soup! Time consuming to make but very hearty. 

– 250 g beans
– 500 g pork ribs, cut into pieces
– carrots, diced or sliced 
– 1 bay leaf
– 1 large onion
– 1 clove of garlic
– 250 g smoked bacon, optional 
– veg broth
– heavy cream
– 1 tbsp marjoram, optional 
– 3 to 4 potatoes, diced 

Soak the beans in water overnight to swell. Drain next day

Fry diced onion with crashed garlic and bacon. Set aside {optional: onion cut it into cubes, sprinkle with salt and pepper, fry for 2 minutes, add flour, mix, add to the soup}

In pot, add ribs, pour water and cook (collect the scum, cook over low heat for 20 minutes)
Add beans
Add veg broth 
Add carrots and bay leaf
Add fried onion
Add heavy cream 
Add marjoram (optional)
Cook until beans are soft
Add salt and pepper and sprinkle of parsley

Peel the potatoes and cut them into cubes, add to the soup. Cook for 1/2 hour (or cook potatoes separately and add them when serving)
